Green Soup

Green Soup
A winter warmer to remember... 



Was having a rather junk food Vegan day at the time. Had spent my morning munching on scrummy Oreos and Chilli Heat-wave Doritos...

Not that there's anything wrong with that, but by the evening my housemate and I were craving something GREEN.

So we came up with this cooking challenge:

To create a soup which was made only from vegetables that were green: both inside and out.

This is what we came up with...

Ingredients:

Serves 4 Vegan Humans

4/5 celery sticks
a good hunk of Broccoli
A bag of Spinach
A bag of Spring Greens 
The green bits on a bunch of Spring Onions (because I was taking this challenge too seriously)
Nutritional Yeast
Vegetable Stock powder/cubes
Salt
Pepper
Balsamic Vinegar
Garlic power/fresh
Dried Chilli flakes
Boiling water

1. Chop Broccoli into florets, spray/roll in Olive Oil & roast for 20-25 minutes at 180°C

2. Chop celery & spring greens. Boil in water for approx 20 mins (less if you want a thicker soup, more if you prefer it more watery. I like it thicker, who the fuck likes that thin soup shit.)

3. Add garlic, spinach & chopped spring onions

4. Broccoli should be roasted by now. Add to boiling veg.

5. Boil for further 5 minutes

6. Turn off heat & let it cool. Or be impatient like me and dangerously move onto the next step...

7. Ladle as much of this mixture you can get into your blender. BLEND THE SHIT OUT OF IT.

8. Make sure all of your veg is blended and pour it into a giant bowl/saucepan

9. Add vegetable stock powder to taste (usually a good few spoonfuls)

10. Dump in some of that Nutritional Yeast to taste, because it's VERY GOOD FOR YOU.

11. Add salt, pepper & balsamic vinegar to taste

12. Reheat if necessary

13. Serve in a bowl. Sprinkle chilli flakes on top for a kick/to make it look fancy


Serve with brown bread or pita with a vegan 'butter' spread

THEN SLURP UP THAT DELICIOUS GREEN SLOP.
