Vegan Ma Po Tofu

Brought up in a part-asian family, my parents fed me classic Chinese dishes as I grew up; from Hakau (prawn dumplings) to Lok Bock Gow (Turnip cake), I've always drooled over those fucking scrumptious Dim Sum dishes. NOM.
Since turning Vegan, I've missed my fave Asian foods. My local takeaway always seem to have to chuck some form of grim animal product into their recipes (BOOOO) So I took it upon myself to create a vegan alternative to one of my most beloved Chinese dishes..
Mápó dòufu is typically made using a spicy bean sauce base, fermented black beans and some form of minced meat (either pork or beef).
So I got rid of the shitty minced animal part of the recipe & replaced it with a cruelty-free alternative:
Ingredients
1 block of Medium-firm tofu (silken or otherwise)
Spicy bean paste/Ma Po sauce (available in most Chinese Supermarkets)
Prepared Black beans (optional)
Spring Onions
Sesame Oil
Dried soya protein mince (or any Vegan mince alternative)
Spicy Sichuan sauce (available in most Chinese Supermarkets)
2 garlic cloves
Fresh ginger (I use a piece as large as the upper half of my thumb!)
Chilli Oil
Light soy sauce
Sugar
Hot water
Brown rice or Wholewheat noodles
1. Chop tofu block into cubes.
2. Chop spring onions, ginger & garlic
3. In one large frying pan/wok, empty the dried soya protein mince. Add boiling water to rehydrate and simmer over heat for 8 minutes.
4. Add to this, 2 large tblspoons of sesame oil and 1 tblspoon of chilli oil.
5. Fry with ginger & garlic
6. Add prepared black beans (optional)
7. Add spicy bean paste/Ma Po sauce to taste. Approx 1/4 of a jar needed.
8. Add Spicy Sichuan sauce to taste. Approx 1.4 jar needed.
9. If needed, add soy sauce and sugar to taste
10. Simmer on a low heat, whilst stirring for 10 minutes. During this prepare rice or noodles using instructions on the packet...
Serve it up.
