Pomegranates, Pumpkins & Pine Nuts...
Magpie style, I'm a big lover of brightly coloured lunches.
The other day I whipped up this delicious Bulgar Wheat 'salad' to take with me to hospital. I actually used a pumpkin we had left over from Halloween- I used half of it to make a curry, and the other half went towards this bad boy.
And yes, it tasted as fucking delicious as it looks.
Ingredients
(Makes enough for 3+ lunchtimes worth of deliciousness)
approx 1/2 a pumpkin
1 Pomegranate
Bunch of fresh coriander
1 packet of Pine nuts
Decent portion of pre-prepared Bulgar Wheat (use your brain, approx 1/4 of a small packet) Cook using instructions on the packet.
Salt
Pepper
Extra Virgin Olive Oil
Squeeze of lemon juice or Balsamic Vinegar
1. Chop your pumpkin UP. Make sure you've got none of the shitty stringy bits from the middle of the pumpkin. Keep the skin on it and slaver in an oil of your choice, salt, pepper & whatever else spices you fancy (ie. cumin, garlic etc). Roast in oven at 180°C for 45 minutes- 1 hour. Remove. Peel skin off once pumpkin has cooled.
2. Chop roasted pumpkin into cubes.
3. Chop coriander & scoop all of the pomegranate kernels out of your pomegranate
4. Mix pumpkin cubes, pomegranate, coriander & pine nuts with the Bulgar Wheat
5. Add a good glug of the extra virgin olive oil
6. Add salt, pepper & lemon juice to taste
EAT YOUR HEAVENLY LUNCH.
