Greenified Rice & Pita Pockets

Greenified Rice & Pita Pockets
Because it's good for your Vegan body hole.

Was feeling rather SICKLY today. So for lunch, I cooked myself something that is GOOD FOR ME.

Ingredients
Serves one sickly Vegan human

Half a cup of cooked rice (I used Uncle Ben's ready cooked mushroom rice because I was ill & lazy)
1/2 a bunch of chopped fresh coriander
Spring Greens (a cupful)
Chopped spinach (a cupful)
Clove of garlic
Unsweetened plain Soya yoghurt
Salt
Pepper
A squeeze of Lemon
Whole meal pita bread
Vegan 'butter' (I use Soya spread)

1. Briefly stir fry spring greens for 5 minutes in frying pan on low heat with chopped garlic

2. Turn off heat. Add chopped spinach pan and mix till slightly wilted.

3. Add cooked rice, soya yoghurt. Mix.

4. Add coriander. MIX.

5. Add salt, pepper & lemon to taste.

6. Toast your pita bread. Smother in vegan 'butter'

Stuff your pita with greenified rice

Shove it down your gullet until you are no longer a sickly Vegan.
