Pasta Stew

Pasta Stew

Pasta in a stew...you think that sounds cray? More like crazy FUCKING DELICIOUS.


Inspired by a recipe I found online a while back, this flavoursome pasta stew can really warm the socks off your Vegan body. 

Ingredients

Wholewheat pasta twirls

Whatever veg you have lying around. I used:

1 extremely large tomato
1 massive carrot
A big handful of finely chopped kale
1 giant white onion
2 sticks of celery
A tin of kidney beans/cannellini beans/whatever fucking beans you want
A big cup of fresh button mushrooms/a tin of button mushrooms
Garlic powder/fresh
A sweet potato

Balsamic vinegar
2 Bay leaves
Dried italian herbs
Vegetable Bouillon 
Nutritional Yeast

1. Fill up a large saucepan with boiling water. Add chopped tomato, chopped carrot, chopped kale, chopped onion, chopped celery, peeled & cubed sweet potato, bay leaves, italian herbs & chopped mushrooms

2. Boil for 15-20 mins

3. Simultaneously cook a big cup of wholewheat pasta using instructions on the packet

4. Add beans & cooked pasta to the boiling broth! Turn off heat. 

5. Add a couple of spoons of Veg Bouillon to taste. Add a good few heaped spoons of Nutritional Yeast to the mix.

6. Add salt, pepper & balsamic vinegar to taste.

7. Don't forget to remove those naughty Bay Leaves

Serve with wholemeal pita or brown bread smothered in Vegan 'butter'. Yum.

NOW EAT YOUR STEW FULL OF JOY.
