Super Hot Mushroom Tandoori
I thought I'd made tandoori.
Having since googled the definition of 'Tandoori' ('denoting or relating to a style of Indian cooking based on the use of a tandoor.') it turns out that I had not in fact, at any point during today, created a tandoori.
But whatever I made, it tasted HOT. In the GOOD WAY.
Ingredients
1 big box of mushrooms (whatever kind of mushroom you want)
Bunch of coriander
1 white onion
1 tin of tomatoes
1 tin of coconut milk or a pot of plain unsweetened soya yoghurt
Garam Masala paste
Cumin
1 tblspn ginger powder/fresh
1 heaped tblespn garlic powder/fresh
5 whole cloves
Brown rice
1. Wash your dirty mushrooms. DON'T CHOP THEM UP! Throw them in a big pan. Chop your onion. Throw that in too.
2. Add chopped tomatoes. Throw in your cloves, cumin, garlic and ginger. Bring to the boil, then simmer for 25-30 minutes.
3. (Don't forget to put your rice on)
4. Add a big teaspoon of Garam Masala paste to your mushrooms. Or more if you can take the heat...
5. Add coconut milk or soya yoghurt to the mix depending on your PREFERENCE. STIR. Turn off heat.
6. ADD SALT TO TASTE. Challenge: see if you can fish out the cloves...
7. Chop your coriander. Mix in.
SERVE IT UP
NOW BURN YOUR TONGUE ON THAT SMOKING HOT FUNGI DELICIOUSNESS.
